Acarajé
Deep-fried fritters made from black-eyed pea paste, split open and stuffed with vatapá, shrimp, and salad.

Ingredients
- 500g black-eyed peas, soaked and peeled
- 1 onion, chopped
- Salt to taste
- 500ml dendê (red palm) oil for frying
- Vatapá (for stuffing)
- Dried shrimp (for stuffing)
- Tomato and onion salad (for stuffing)
Instructions
- Blend the soaked and peeled peas with onion in a food processor until it forms a thick paste.
- Beat the paste with a wooden spoon until it is light and airy.
- Shape large spoonfuls into balls and fry in hot dendê oil until golden and crispy.
- Drain on paper towels.
- Split each fritter in half and stuff with vatapá, dried shrimp, and salad.
