  1. Blend the soaked and peeled peas with onion in a food processor until it forms a thick paste.
  2. Beat the paste with a wooden spoon until it is light and airy.
  3. Shape large spoonfuls into balls and fry in hot dendê oil until golden and crispy.
  4. Drain on paper towels.
  5. Split each fritter in half and stuff with vatapá, dried shrimp, and salad.
