Acquacotta

"Cooked water" — the poorest Tuscan peasant soup of wild greens, onion, and bread with a poached egg on top.

Ingredients

Instructions

  1. Saute onions in olive oil very slowly until golden.
  2. Add tomatoes and chilli. Cook 10 minutes.
  3. Add greens and water. Simmer 20 minutes.
  4. Toast bread and place in soup bowls.
  5. Crack eggs directly into simmering soup and poach 3 minutes.
  6. Ladle soup over bread with a poached egg on top.
