Acquacotta
"Cooked water" — the poorest Tuscan peasant soup of wild greens, onion, and bread with a poached egg on top.

Ingredients
- 2 large onions, sliced
- 4 ripe tomatoes, chopped
- Assorted greens (chard, wild greens, chicory)
- 4 eggs
- 4 thick slices stale Tuscan bread
- 6 tbsp olive oil
- 1L water
- Salt and chilli
Instructions
- Saute onions in olive oil very slowly until golden.
- Add tomatoes and chilli. Cook 10 minutes.
- Add greens and water. Simmer 20 minutes.
- Toast bread and place in soup bowls.
- Crack eggs directly into simmering soup and poach 3 minutes.
- Ladle soup over bread with a poached egg on top.
