Adana Kebap
Turkey's famous spicy hand-chopped lamb kebab, named after the city of Adana and seasoned with red pepper flakes.

Ingredients
- 600g ground lamb (high fat)
- 1 red bell pepper, finely chopped
- 2 tbsp pul biber (red pepper flakes)
- 1 tsp salt
- Flat metal skewers
Instructions
- Mix lamb with red pepper and flakes. Knead until the meat becomes sticky.
- Thread onto wide skewers, pressing firmly.
- Grill over high heat coals for 8 minutes.
- Serve atop thin lavas bread with sumac onions.
