Chicken and Pork Adobo
The Philippines' unofficial national dish — chicken and pork braised in a tangy sauce of soy sauce, vinegar, garlic, and black peppercorns until the sauce reduces to a rich, glossy glaze.

Ingredients
- 500g chicken pieces (thighs and drumsticks)
- 500g pork belly, cubed
- 8 cloves garlic, crushed
- 100ml soy sauce
- 100ml white cane vinegar (or rice vinegar)
- 3 bay leaves
- 1 tbsp whole black peppercorns
- 1 tbsp sugar (optional)
Instructions
- Combine chicken, pork, garlic, soy sauce, vinegar, bay leaves, and peppercorns in a pot.
- Bring to a boil, then reduce heat and simmer, covered, for 30 minutes.
- Uncover and continue cooking until sauce reduces and thickens.
- Optional: remove meat and brown in a hot pan for crispy edges, then return to sauce.
- Serve over steamed white rice with the reduced sauce spooned over.
