Ajiaco Bogotano
A rich, creamy chicken and potato soup from Bogotá, flavored with the unique guascas herb.

Ingredients
- 2 lbs chicken breast
- 2 lbs papas criollas (small yellow potatoes)
- 2 lbs red potatoes
- 2 lbs russet potatoes
- 3 ears of corn, halved
- 1/2 cup dried guascas
- 1 cup heavy cream
- 1/2 cup capers
- 2 avocados
Instructions
- 1. Simmer chicken, corn, and all three types of potatoes in a large pot. 2. The criolla potatoes should dissolve to thicken the soup. 3. When chicken is tender, remove and shred. 4. Add guascas 15 minutes before finishing. 5. Serve in bowls, topped with shredded chicken. 6. Provide cream, capers, and avocado on the side for diners to add.
