Akara (Bean Fritters)
Crispy Nigerian black-eyed pea fritters — a popular street food breakfast, golden on the outside and fluffy within.

Ingredients
- 500g black-eyed peas, soaked and peeled
- 1 large onion, roughly chopped
- 2 scotch bonnet peppers
- 1 tsp salt
- Vegetable oil for deep frying
Instructions
- Soak peas for 4 hours. Rub to remove skins and rinse.
- Blend beans with onion, peppers, and salt to a thick, fluffy paste.
- Beat the paste vigorously with a wooden spoon to incorporate air.
- Heat oil to 170°C. Drop spoonfuls of batter into oil.
- Fry until golden brown on all sides, about 3-4 minutes. Drain on paper towels.
