Zhou Style Roasted Duck
Duck rubbed with honey, soy, and spices and roasted over a wood fire — an ancestor of Peking duck documented in Zhou dynasty palace records as a royal feast preparation.

Ingredients
- whole duck, honey, soy sauce (or ancient salt sauce), Shaoxing wine, scallions, ginger, star anise, cassia bark, Sichuan pepper, sesame oil
Instructions
- Mix honey, soy sauce, and wine. Rub inside cavity with scallions, ginger, and spices. Coat exterior generously with honey mixture. Hang to air-dry in a cool, breezy place for 4-6 hours (or overnight refrigerated uncovered). Roast over wood or at 200C on a rack for 1.5 hours, basting every 30 minutes with honey mixture. Rest 15 minutes before carving.
