Taro Congee
Rice slow-cooked with taro until silky and thick — a Zhou dynasty autumn preparation. Taro was considered one of the five ancient vegetables of Chinese cuisine.

Ingredients
- white rice, taro root, water or light broth, scallions, ginger, salt, sesame oil
Instructions
- Peel taro and dice. Rinse rice. Combine rice, taro, and ginger in a pot with 8 times the volume of water. Bring to boil. Reduce to lowest heat. Simmer uncovered 1-1.5 hours, stirring occasionally, until rice has broken down into a silky porridge. Season with salt. Drizzle with sesame oil. Garnish with sliced scallions.
