Jiaozi (Ancient Stuffed Dumplings)

Ingredients
- plain flour, boiling water
- for filling: minced pork, Chinese chives (jiucai), soy sauce, sesame oil, fresh ginger, salt, Shaoxing wine
Instructions
- Make dough: pour boiling water into flour, mix to shaggy dough. Knead smooth. Rest covered 30 minutes. Make filling: combine minced pork, chopped chives, soy sauce, sesame oil, ginger, wine, and salt. Roll dough thin. Cut into rounds. Place filling in center. Fold and pleat edges to seal. Boil in water 6-8 minutes until dumplings float and skin is cooked through. Serve with vinegar dipping sauce.
