Lu Rou (Soy-Braised Pork)

Pork belly braised in soy sauce, rice wine, and rock sugar until lacquered and tender — a Han dynasty preparation that is the ancestor of the beloved modern lu rou fan.

  1. Cut pork into chunks. Blanch in boiling water 5 minutes to remove impurities. Drain. Melt rock sugar in a little oil until amber (caramel). Add pork and coat in caramel. Add soy sauce, wine, ginger, scallions, star anise, and cassia. Cover with water. Braise on low heat 1.5 hours until pork is very tender and sauce is thick and glossy. Serve over rice.
