Lü Dou Zhou (Mung Bean Congee)
Green mung beans slow-cooked with rice into a cooling summer porridge — documented in Chinese medical texts as a heat-clearing preparation for summer months.
Cuisine: Ancient World
Ingredients
- green mung beans, white rice, water, rock sugar or brown sugar
Instructions
- Soak mung beans 2 hours. Drain. Combine mung beans and rice with 10 times their combined volume of water. Bring to a rolling boil. Skim any foam. Reduce to a low simmer. Cook 1 hour, stirring regularly, until beans burst and rice has dissolved into a thick congee. Sweeten with rock sugar. Serve warm in summer or chilled.
