Egyptian Date and Honey Cake

A sweet dense cake of dates, honey, and emmer flour baked in clay molds — an offering to the gods documented in Egyptian temple inscriptions.

Instructions

  1. Mix mashed dates with honey and oil.
  2. Beat in eggs.
  3. Add flour, coriander, and salt. Mix to a thick batter.
  4. Pour into a greased clay mold or muffin tin.
  5. Press nuts on top.
  6. Bake at 175C for 25-30 minutes until firm.
  7. Cool. These cakes improve overnight.
