Egyptian Date and Honey Cake
A sweet dense cake of dates, honey, and emmer flour baked in clay molds — an offering to the gods documented in Egyptian temple inscriptions.

Ingredients
- 200g Medjool dates, pitted and mashed
- 150g emmer wheat or spelt flour
- 3 tbsp honey
- 2 tbsp sesame oil or butter
- 2 eggs
- 1/2 tsp coriander
- Pinch of salt
- Pine nuts or pistachios to press on top
Instructions
- Mix mashed dates with honey and oil.
- Beat in eggs.
- Add flour, coriander, and salt. Mix to a thick batter.
- Pour into a greased clay mold or muffin tin.
- Press nuts on top.
- Bake at 175C for 25-30 minutes until firm.
- Cool. These cakes improve overnight.
