Egyptian Red Lentil Soup
Red lentils boiled to a thick soup with cumin, coriander, and onion — the ancient everyday meal of the Egyptian poor, eaten continuously for 4,000 years.

Ingredients
- 350g red lentils
- 1.2L water
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tsp cumin
- 1 tsp coriander
- 2 tbsp olive oil
- Salt
- Lemon juice
- Fresh coriander
Instructions
- Rinse lentils.
- Boil with water 20 minutes until dissolved.
- Fry onion and garlic in oil until golden.
- Add cumin and coriander. Cook 1 minute.
- Add to lentil soup. Stir.
- Season with salt and lemon juice.
- Serve with fresh coriander and flatbread.
