Grilled Fish with Garos Sauce
Fresh fish grilled over charcoal and dressed with garos — the Greek fermented fish sauce that preceded the Roman garum and is mentioned by Archestratus.

Ingredients
- whole sea bass or bream, olive oil, salt, for garos sauce: small fish or anchovies fermented in salt (approximated with fish sauce), oregano, vinegar, olive oil
Instructions
- Score the fish. Rub with olive oil and salt. Grill over hot coals 5-7 minutes per side. Make garos sauce: mix fish sauce with a little vinegar, olive oil, and dried oregano. Pour sauce over grilled fish. Eat with flatbread and wine-vinegar.
