Grilled Fish with Garos Sauce

  1. Score the fish. Rub with olive oil and salt. Grill over hot coals 5-7 minutes per side. Make garos sauce: mix fish sauce with a little vinegar, olive oil, and dried oregano. Pour sauce over grilled fish. Eat with flatbread and wine-vinegar.
