Garos Dipping Sauce
A table sauce of fermented small fish mixed with vinegar, olive oil, and herbs — the Greek fish sauce used as both a cooking ingredient and condiment at the symposium table.

Ingredients
- fish sauce (as substitute for ancient garos), red wine vinegar, olive oil, fresh oregano, dried coriander, a pinch of pepper
Instructions
- Mix fish sauce with red wine vinegar (ratio 1:2, as garos was stronger than fish sauce). Add olive oil, dried coriander, and fresh oregano. Add a pinch of pepper. Taste — adjust vinegar and oil balance. Serve in a small clay dish for dipping bread and fish.
