Must Cake (Oenoutos)
A dense cake made with grape must (freshly pressed grape juice), flour, and sesame — a harvest season sweet tied to the Dionysian grape festivals.

Ingredients
- grape must (or grape juice reduced to 1/3), wheat flour, sesame seeds, fennel seeds, olive oil, anise
Instructions
- Simmer grape must until reduced and syrupy if using fresh juice. Mix with flour, toasted sesame seeds, fennel seeds, and anise to form a thick batter. Add olive oil. Pour into an oiled baking vessel. Bake at 160C for 35-40 minutes until firm. Cool completely. The sweetness comes entirely from the grape must.
