Ingredients
- pitted green and black olives, fennel fronds, fresh coriander, dried cumin, dried rue (substitute: fresh mint), vinegar, olive oil, salt
Instructions
- Remove olive pits. Pound olives roughly in a mortar — leave texture, do not puree. Add chopped fennel, coriander, cumin, and a very small pinch of rue (or mint). Add a splash of vinegar and a drizzle of olive oil. Season. Serve with flatbread as an appetizer.
