  1. Remove olive pits. Pound olives roughly in a mortar — leave texture, do not puree. Add chopped fennel, coriander, cumin, and a very small pinch of rue (or mint). Add a splash of vinegar and a drizzle of olive oil. Season. Serve with flatbread as an appetizer.
