Plakous (Layered Cheese and Honey Cake)

Layers of thin barley or wheat pastry filled with fresh cheese, honey, and poppy seeds — the ancient Greek "flat cake" described as a luxury dessert by Archestratus.

  1. Make a thin dough of flour, water, and oil. Roll into very thin sheets. Layer in an oiled baking dish: dough, cheese mashed with honey, poppy seeds, dough, repeat. Scatter chopped dried figs between layers. Brush top with honey. Bake in a moderate clay oven (or 175C modern) 25-30 minutes until golden. Cool before cutting.
