Quince in Honey (Melimelon)
Quinces preserved in thick honey — a Greek winter preserve mentioned by Plutarch and Dioscorides, eaten as a digestive at the end of a meal.

Ingredients
- quinces, honey (generous amount), bay leaves, sweet wine, pepper
Instructions
- Peel and core quinces. Cut into wedges. Layer in a clay or ceramic pot with bay leaves. Cover completely with honey mixed with a splash of sweet wine. Add a pinch of pepper. Cook over very low heat for 30-40 minutes until quinces are soft and the honey has thickened. Cool. Eat in small portions.
