Skorothalmi (Garlic-Walnut Sauce)

  1. Pound garlic cloves with coarse salt in a mortar to a paste. Add walnuts. Continue pounding until combined. Add a splash of vinegar. Drizzle in olive oil while stirring, as you would a modern aioli. Optionally add stale bread for thickness. Serve with fish, roasted meats, or fried vegetables.
