Herb-Stuffed Roasted Piglet
A whole piglet stuffed with herbs, dried figs, and spiced wine, then roasted — the centerpiece of a Greek symposium feast, described in Athenaeus.

Ingredients
- whole piglet, dried figs, herbs (thyme, oregano, marjoram), garlic, sweet wine, honey, olive oil, salt, cumin
Instructions
- Fill the cavity of the piglet with a mixture of chopped dried figs, crushed garlic, thyme, oregano, marjoram, cumin, a cup of sweet wine, and honey. Truss and rub exterior with olive oil and salt. Roast over a fire or in a very hot oven (200C), rotating slowly, for 2.5-3 hours until skin is crackling and crisp. Rest 20 minutes before carving.
