Archestratus Tuna in Brine
Salted tuna belly braised with herbs and vinegar — described by Archestratus as the finest preserved fish in the Mediterranean, to be eaten in Byzantium.

Ingredients
- salt-packed tuna belly (or fresh tuna, well salted), olive oil, vinegar, dried oregano, fresh fennel, capers (optional)
Instructions
- If using salt-packed fish, soak in cold water 30 minutes to reduce saltiness. Drain. Cut into thick slices. Warm in olive oil with fennel and oregano. Do not overcook. Add a splash of vinegar. Serve with flatbread and olives.
