Honey-Wine Cakes (Enkrides)
Fried wheat cakes soaked in honey and sweet wine — the festive sweet of ancient Greece, offered at temples and eaten at wedding feasts.

Ingredients
- wheat flour, olive oil for frying, honey, sweet wine (use Muscat or sweet white wine), sesame seeds, optional: poppy seeds
Instructions
- Mix flour with a little oil and enough water to form a soft dough. Pinch into walnut-sized pieces. Fry in olive oil until golden and puffed. While hot, soak briefly in warm honey mixed with sweet wine (2:1 ratio). Drain and sprinkle with sesame seeds. Eat warm.
