Krishara (Sesame Rice Cake)

Rice and sesame mixed with jaggery and ghee, cooked into a thick paste and shaped into cakes — an ancient Vedic festival food distinct from the better-known krsara.

Instructions

  1. Toast sesame seeds in a dry pan until golden. Combine cooked warm rice with jaggery. Add melted ghee and cardamom. Mix vigorously — the jaggery will dissolve and bind the mixture. Add toasted sesame seeds. Spread on a flat oiled surface. Allow to cool slightly. Cut or shape into small rounds or diamonds. Eat warm or at room temperature.
