Manda (Rice Starch Water)
The pure starchy liquid drained from boiled rice — the most medicinal of all ancient Indian rice preparations, used as a therapeutic beverage in Ayurveda.

Ingredients
- white rice, water (six times the rice), rock salt, ghee
Instructions
- Wash rice. Cook in six times its volume of water until rice is soft but not dissolved. Do not stir. Carefully tilt the pot and collect the liquid that rises to the surface. This thin, opaque liquid is manda. Season with rock salt and a small amount of melted ghee. Serve warm as a drink.
