Mudga Yusha (Mung Bean Broth)
A light broth made from whole mung beans simmered with ginger and seasoned with rock salt and ghee — described in the Charaka Samhita as the most beneficial of all legume preparations.

Ingredients
- whole green mung beans, water, fresh ginger, turmeric, rock salt, ghee, black pepper
Instructions
- Rinse mung beans. Soak 30 minutes if possible. Drain. Cook in fresh water with ginger and turmeric until beans are completely soft and broth is golden (40-45 minutes). Strain if serving as a broth, or leave whole for a heartier preparation. Season with rock salt. Drizzle with ghee. Crack black pepper over the top.
