Mudga Yusha (Mung Bean Broth)

A light broth made from whole mung beans simmered with ginger and seasoned with rock salt and ghee — described in the Charaka Samhita as the most beneficial of all legume preparations.

Instructions

  1. Rinse mung beans. Soak 30 minutes if possible. Drain. Cook in fresh water with ginger and turmeric until beans are completely soft and broth is golden (40-45 minutes). Strain if serving as a broth, or leave whole for a heartier preparation. Season with rock salt. Drizzle with ghee. Crack black pepper over the top.
