Peya (Nourishing Rice Gruel)
A lightly thickened rice gruel — between the watery manda and thick yavagu, seasoned with rock salt and ginger. The Ayurvedic rehabilitation food.

Ingredients
- white rice, water (four parts water to one part rice), fresh ginger, rock salt, ghee
Instructions
- Rinse rice. Add to four times its volume of water with a piece of fresh ginger. Simmer uncovered 30-35 minutes, stirring occasionally, until rice begins to dissolve and liquid thickens slightly. Season with rock salt. Remove ginger. Add a small spoon of ghee. Serve in a cup — it should be pourable but slightly viscous.
