Dry-roasted barley flour mixed with ghee and water into a quick porridge — the ancient Indian sattu preparation used by travelers and soldiers.
Cuisine: Ancient World
Ingredients
- barley flour, ghee, water, rock salt, optional: jaggery
Instructions
- Roast barley flour in a dry pan over medium heat, stirring constantly, until it turns golden and smells nutty (8-10 minutes). Remove from heat. Add melted ghee and mix well. Gradually add warm water, stirring to avoid lumps, until a smooth, thick porridge forms. Season with rock salt, or mix with jaggery for a sweet version.
