Saktu Laddoo (Roasted Grain Balls)
Roasted grain flour (barley, wheat, or chickpea) mixed with jaggery, ghee, and cardamom and shaped into balls — the Vedic travel food that became the modern laddoo.

Ingredients
- roasted barley flour or chickpea flour, jaggery, ghee, cardamom, fennel seeds, optional: roasted sesame or peanuts
Instructions
- Roast flour in ghee until nutty and golden. Cool slightly. Melt jaggery in a little water to a syrup. Mix into flour. Add cardamom and fennel. The mixture should be crumbly but hold together when pressed. While still warm, roll into golf-ball-sized rounds. Press firmly. Cool completely before storing.
