Saktu Laddoo (Roasted Grain Balls)

Roasted grain flour (barley, wheat, or chickpea) mixed with jaggery, ghee, and cardamom and shaped into balls — the Vedic travel food that became the modern laddoo.

Instructions

  1. Roast flour in ghee until nutty and golden. Cool slightly. Melt jaggery in a little water to a syrup. Mix into flour. Add cardamom and fennel. The mixture should be crumbly but hold together when pressed. While still warm, roll into golf-ball-sized rounds. Press firmly. Cool completely before storing.
