Supa (Ancient Lentil Soup)
A spiced lentil broth — the ancient Indian word for soup/sauce. Supa is among the most frequently mentioned dishes in Vedic and post-Vedic texts as the accompaniment to rice.

Ingredients
- split red lentils or masoor dal, water, turmeric, fresh ginger, rock salt, ghee, cumin seeds, asafoetida
Instructions
- Rinse lentils. Add to twice their volume of water with turmeric and ginger. Simmer 35-40 minutes until completely soft and soupy. Season with rock salt. In a small pan, heat ghee until shimmering. Add cumin seeds and a pinch of asafoetida — they will crackle. Pour sizzling spiced ghee over the lentil broth. Stir. Serve over rice.
