Surasa (Sweet-Sour Tamarind Sauce)
A sharp, tangy sauce of tamarind, jaggery, ginger, and cumin — one of the ancient Indian sour sauces (amla rasa preparations) used to balance Ayurvedic meals.

Ingredients
- tamarind pulp, jaggery, fresh ginger, cumin seeds, black salt, fresh coriander
Instructions
- Dissolve tamarind in warm water. Strain thoroughly to remove seeds and fiber. Bring to a simmer with jaggery. Stir until dissolved. Toast and grind cumin seeds. Add cumin, grated ginger, and black salt. Simmer 10 minutes until slightly thickened. Garnish with fresh coriander. Serve as a dipping sauce or drizzle over rice.
