  1. Rinse barley. Simmer in four times its volume of water for 40 minutes, stirring regularly, until thick and porridge-like. In a small pan, toast cumin seeds until fragrant. Grind with black pepper. Season barley with rock salt and stir in ghee. Add the ground cumin-pepper mixture. Serve in a clay bowl.
