Elamite Broth
A spiced meat broth from the Yale tablets attributed to the Elamite tradition — featuring meat, leeks, garlic, and the aromatic herb samidu.

Ingredients
- 500g lamb or goat shoulder, bone-in
- 1L water
- 3 leeks, sliced
- 6 cloves garlic
- 1 tsp cumin
- 1 tsp coriander
- Fresh mint or dill (substitute for samidu)
- Salt
Instructions
- Place meat in a pot with cold water.
- Bring to boil. Skim foam.
- Add leeks, garlic, cumin, and coriander.
- Simmer 1.5 hours until meat is very tender.
- Add fresh mint or dill in the last 5 minutes.
- Season with salt.
- Serve meat in broth.
