Elamite Broth

A spiced meat broth from the Yale tablets attributed to the Elamite tradition — featuring meat, leeks, garlic, and the aromatic herb samidu.

Ingredients

Instructions

  1. Place meat in a pot with cold water.
  2. Bring to boil. Skim foam.
  3. Add leeks, garlic, cumin, and coriander.
  4. Simmer 1.5 hours until meat is very tender.
  5. Add fresh mint or dill in the last 5 minutes.
  6. Season with salt.
  7. Serve meat in broth.
