Instructions

  1. Clean and scale fish.
  2. Mix leeks, garlic, coriander, and cumin.
  3. Stuff the cavity of each fish with the leek mixture.
  4. Rub outside with oil and salt.
  5. Wrap in wet clay or foil (for modern approximation).
  6. Bake at 180C for 20-25 minutes, or place in embers.
  7. Open the wrapping and garnish with fresh herbs.
