Grape Wine and Vinegar Reduction
A reduction of grape wine and date vinegar used as a sauce for meats — documented in royal palace records from Nineveh as a table condiment for roasted meats.

Ingredients
- 250ml red wine
- 100ml date vinegar or apple cider vinegar
- 2 tbsp date syrup
- 1 tsp cumin
- 1/4 tsp black pepper
- Pinch of salt
Instructions
- Combine wine, vinegar, and date syrup in a small saucepan.
- Add cumin, pepper, and salt.
- Bring to a simmer. Reduce by half over medium heat (15-20 minutes).
- The sauce should be glossy and slightly thick.
- Serve warm over roasted lamb or bird.
