Palace-Style Spiced Leg of Lamb
A whole leg of lamb rubbed with salt, fat, cumin, and coriander, roasted in a clay oven — the centerpiece of Babylonian palace banquets.

Ingredients
- 1 leg of lamb (about 2kg)
- 4 tbsp sheep fat or clarified butter
- 2 tsp salt
- 2 tsp cumin
- 2 tsp coriander
- 1 tsp garlic powder (or 6 cloves garlic, mashed)
- 2 leeks, halved
- Fresh coriander to garnish
Instructions
- Mix fat, salt, cumin, coriander, and garlic.
- Score the lamb deeply. Rub marinade all over and into the cuts.
- Rest 1 hour minimum.
- Place leeks in a roasting pan. Set lamb on top.
- Roast at 190C for 1.5-2 hours, basting every 30 minutes.
- Rest 20 minutes before carving.
- Serve on flatbread with fresh coriander.
