Palace-Style Spiced Leg of Lamb

A whole leg of lamb rubbed with salt, fat, cumin, and coriander, roasted in a clay oven — the centerpiece of Babylonian palace banquets.

Instructions

  1. Mix fat, salt, cumin, coriander, and garlic.
  2. Score the lamb deeply. Rub marinade all over and into the cuts.
  3. Rest 1 hour minimum.
  4. Place leeks in a roasting pan. Set lamb on top.
  5. Roast at 190C for 1.5-2 hours, basting every 30 minutes.
  6. Rest 20 minutes before carving.
  7. Serve on flatbread with fresh coriander.
