Pashrutum (Seasoned Water Broth)
A thin, herb-seasoned broth described in the Yale Babylonian tablets — water boiled with leek, onion, garlic, and fat to create a simple daily potage.

Ingredients
- 1L water
- 2 tbsp sheep fat or butter
- 2 leeks, sliced
- 1 onion, chopped
- 4 cloves garlic
- 1 tsp coriander seeds, crushed
- 1/2 tsp cumin
- Salt to taste
Instructions
- Heat fat in a clay pot or heavy saucepan.
- Add leek and onion. Cook until softened.
- Add garlic, coriander, and cumin. Stir briefly.
- Add water. Bring to a boil.
- Simmer 25 minutes until flavors meld.
- Season with salt.
- Serve as a simple daily broth.
