Ziqu (Spiced Lamb Broth)

A named broth from the Yale tablets — lamb simmered with leeks, garlic, cumin, and coriander in a light broth. One of the foundational broths of ancient Babylonian cuisine.

Instructions

  1. Put lamb in cold water. Bring to boil. Skim foam carefully.
  2. Add leeks, garlic, cumin, and coriander.
  3. Simmer 1.5 hours, skimming occasionally.
  4. Add dill in last 10 minutes.
  5. Remove lamb. Shred meat.
  6. Season broth generously with salt.
  7. Return meat to broth. Serve.
