Ziqu (Spiced Lamb Broth)
A named broth from the Yale tablets — lamb simmered with leeks, garlic, cumin, and coriander in a light broth. One of the foundational broths of ancient Babylonian cuisine.

Ingredients
- 700g bone-in lamb
- 1.5L water
- 3 leeks, sliced
- 6 cloves garlic, whole
- 1 tsp cumin
- 1 tsp coriander, ground
- 2 sprigs fresh dill
- Salt
Instructions
- Put lamb in cold water. Bring to boil. Skim foam carefully.
- Add leeks, garlic, cumin, and coriander.
- Simmer 1.5 hours, skimming occasionally.
- Add dill in last 10 minutes.
- Remove lamb. Shred meat.
- Season broth generously with salt.
- Return meat to broth. Serve.
