Semolina fritters fried in oil and soaked in honey and pepper — the crispy Roman sweet from the last chapter of Apicius, the original honey-soaked fried dough.

Instructions

  1. Mix semolina with water to a stiff paste. Shape into small rounds or fingers. Fry in olive oil until golden and puffed. While hot, soak briefly in warm honey. Sprinkle with black pepper. Eat immediately.
