Flamingo (or duck) braised in a sauce of pepper, cumin, coriander, fennel, vinegar, dates, honey, and garum — the most exotic meat recipe in Apicius.

Ingredients
- duck (substitute for flamingo), black pepper, cumin, coriander seeds, fennel seed, vinegar, Medjool dates, honey, garum (fish sauce), olive oil, mint
Instructions
- Braise duck pieces in water until partially cooked. Make sauce: crush pepper, cumin, coriander, fennel. Add vinegar, chopped dates, honey, and fish sauce. Combine with duck in pan. Simmer 45 minutes until duck is tender and sauce has thickened. Finish with olive oil and fresh mint.
