Lentils with Mustard (Aliter Lenticulam)
Cooked lentils with leeks, dressed with mustard, coriander, vinegar, honey, and olive oil — Apicius gives multiple lentil variations and this is among the most vivid.

Ingredients
- green or brown lentils, leeks, fresh coriander, prepared mustard, vinegar, honey, olive oil, salt, pepper
Instructions
- Rinse lentils. Simmer with chopped leeks and coriander in salted water for 35-40 minutes until tender. Drain, reserving some liquid. Make dressing: whisk mustard, a splash of vinegar, honey, olive oil, and pepper. Pour over warm lentils. Toss gently. Adjust balance of sweet, sour, and pungent.
