Libum (Roman Sacred Cheese Cake)
Baked offerings of flour, fresh cheese, and egg — the sacred libum of Cato the Elder, made as offerings to the Lares (household gods) and eaten at Roman festivals.

Ingredients
- plain flour, fresh ricotta or cottage cheese, egg, bay leaves, honey
Instructions
- Mix flour and cheese to a smooth dough. Beat in egg. Shape into round flat cakes. Place each on a fresh bay leaf. Bake at 190C on a clay or baking stone for 35-40 minutes until golden. Serve warm drizzled with honey.
