Mustacei (Must Wine Cakes)
Wheat flour kneaded with grape must, anise, cumin, lard, and cheese — the ancient Roman must cakes of Cato, baked on bay leaves and eaten at weddings and festivals.

Ingredients
- wheat flour, grape must (reduced) or dark grape juice, anise seeds, cumin seeds, lard or butter, fresh cheese, bay leaves
Instructions
- Mix flour with a generous pour of grape must. Add ground anise, cumin, lard, and crumbled fresh cheese. Knead to a smooth dough — it will be sticky. Shape into flat rounds. Place each on a bay leaf on a baking sheet. Bake at 180C for 25-30 minutes until golden. Cool before eating.
