Minutal Marianum (Seafood Hash)
A chopped seafood stew of fish, squid, and shellfish with leeks, coriander, pepper, wine, and garum — a maritime version of the Roman minutal (hash) from Apicius.

Ingredients
- firm white fish (sea bass or mullet), squid, mussels, leeks, olive oil, coriander seeds, black pepper, white wine, garum (fish sauce), vinegar, honey
Instructions
- Warm oil in a wide pan. Add sliced leeks and cook until soft. Add crushed coriander and pepper. Add fish cut into pieces, squid rings, and cleaned mussels. Pour in wine, fish sauce, and a splash of vinegar with a little honey. Cover and cook 15-20 minutes. Adjust seasoning.
