Ofellas (Marinated Pork Cubes)
Pork shoulder marinated in garum, cumin, and fennel, then roasted and finished in a reduced wine sauce — Apicius gives several ofellas variations.

Ingredients
- pork shoulder, garum (fish sauce), cumin, fennel seeds, lovage or celery seed, white wine, honey, olive oil, vinegar
Instructions
- Cut pork into large cubes. Marinate overnight in fish sauce, cumin, and fennel. Roast at 190C 40 minutes until cooked through and caramelized. Make sauce: reduce wine with honey, a splash of vinegar, lovage, and olive oil. Pour over pork and roast 10 more minutes. The sauce should glaze the pork.
