Pullus Frontonianum (Frontonian Chicken)
Chicken braised in oil, wine, and garum with a bundle of leeks and coriander, finished with defrutum (reduced wine must) — one of the most famous Apician main dishes.

Ingredients
- whole chicken, olive oil, white wine, garum (fish sauce), leeks, fresh coriander, dill, defrutum (reduced grape juice or balsamic glaze), black pepper, lovage
Instructions
- Brown chicken in olive oil. Add wine, fish sauce, leeks, coriander, and dill. Cover and braise over medium heat 45 minutes until fully cooked. Remove chicken. Reduce sauce with a spoonful of defrutum. Season with pepper and lovage. Return chicken to sauce briefly. Serve whole with the braising liquid as sauce.
