Chicken braised in oil, wine, and garum with a bundle of leeks and coriander, finished with defrutum (reduced wine must) — one of the most famous Apician main dishes.

  1. Brown chicken in olive oil. Add wine, fish sauce, leeks, coriander, and dill. Cover and braise over medium heat 45 minutes until fully cooked. Remove chicken. Reduce sauce with a spoonful of defrutum. Season with pepper and lovage. Return chicken to sauce briefly. Serve whole with the braising liquid as sauce.
