Sala Cattabia (Roman Cold Salad Bowl)
Stale bread soaked in vinegar with cheese, cucumber, onion, honey, and herbs — a cold composed salad-dish from Apicius, eaten in summer.

Ingredients
- stale white bread, celery, dried pennyroyal or mint, fresh cheese (goat or ricotta), pine nuts, honey, vinegar, garum (fish sauce), water, cucumber, onion
Instructions
- Soak bread in cold water then squeeze dry. Arrange in a serving dish with layers of celery, mint, crumbled cheese, pine nuts, and thinly sliced cucumber and onion. Make dressing: mix honey, vinegar, fish sauce, and a little water. Pour over salad. Chill in snow or cold water before serving (Apicius specifies this).
