Tisanam (Barley Vegetable Stew)
Hulled barley simmered with leeks, fennel, coriander, beet greens, and garum — an Apician legume-grain stew that was both medicinal and culinary.

Ingredients
- pearled barley, dried peas or chickpeas, leeks, fennel, fresh coriander, beet greens or Swiss chard, garum (fish sauce), olive oil, vinegar, black pepper
Instructions
- Soak barley and peas overnight. Drain. Simmer together in fresh water 30 minutes. Add chopped leeks, fennel, coriander, and beet greens. Continue cooking 25 minutes. Season with fish sauce, oil, and vinegar. The stew should be thick. Finish with a generous crack of black pepper.
