Tyrotarichos (Cheese and Salt-Fish Spread)

Ingredients
- salt-packed anchovies or salt cod, fresh ricotta or goat cheese, black pepper, olive oil, vinegar, dried herbs (oregano, thyme), flatbread to serve
Instructions
- Soak salt fish in cold water 30 minutes. Drain and shred finely. Pound with fresh cheese in a mortar. Season with pepper, vinegar, and dried herbs. Drizzle in olive oil while working to create a spreadable paste. Serve on flatbread or with raw vegetables as a pre-dinner appetizer.
