  1. Mix water and salt in a bowl. Gradually add the cornmeal, mixing with your hand until a soft, smooth dough forms. Let rest for 5 minutes.
  2. Divide dough and form into round discs about 1 inch thick.
  3. Cook on a preheated, lightly oiled griddle (budare) for 5-7 minutes per side until a crust forms.
  4. Optionally, finish in the oven at 180°C for 5-10 minutes until they sound hollow when tapped.
  5. Slice open like a pita and stuff with your favorite fillings.
