Arepas de Harina de Maíz
The soul of Venezuelan cuisine — versatile corn cakes that are grilled or fried and filled with a nearly infinite variety of savory ingredients.

Ingredients
- 2 cups precooked cornmeal (Harina P.A.N. is the standard)
- 2.5 cups warm water
- 1 tsp salt
- Popular fillings: Reina Pepiada (chicken and avocado salad), Domino (black beans and cheese), or Pelúa (shredded beef and cheese)
Instructions
- Mix water and salt in a bowl. Gradually add the cornmeal, mixing with your hand until a soft, smooth dough forms. Let rest for 5 minutes.
- Divide dough and form into round discs about 1 inch thick.
- Cook on a preheated, lightly oiled griddle (budare) for 5-7 minutes per side until a crust forms.
- Optionally, finish in the oven at 180°C for 5-10 minutes until they sound hollow when tapped.
- Slice open like a pita and stuff with your favorite fillings.
